Tom Colicchio Shares His Top Tips For Summer Grilling
The Bravo's Top Chef head judge offered up some foolproof ways to improve your grilling game.
For many, a summer menu is synonymous with a variety of flavorful grilled foods. Luckily, great summer classics can be whipped up on an outdoor grill or a stove-top grill pan, as long as they're cooked the right way.
Now, as summer quickly approaches, Bravo's Top Chef head judge Tom Colicchio is sharing his top grilling tips. No.1: Avoid direct heat
"Make sure to cook over indirect heat. If you’re using charcoal or wood chips, push most of them off to the side once you’ve heated them up to create an indirect heat zone," Tom explains. "It might take a little longer to cook, but you’ll get that great bbq flavor. This technique will also prevent flare ups."
No.2: Take it slow
"Don’t BBQ fast! You might love to cook off some hot dogs and hamburgers quickly," Tom wrote. "But if you have a smaller fire that is maintained over several hours,"You can cook some delicious pork shoulder or brisket low and slow."
No.3: Grill pan users: keep the heat low
"When using a grill pan – turn down your heat. It doesn’t need to be as hot as you think it does," Tom noted. "If you want a nice crispy chicken, cook low and slow – even on a stove top!"
