You’re Gonna Want to Add Bethenny’s Low-Carb Pasta Dish to Your Recipe Book
The Real Housewives of New York City alum starts off in the freezer section for this easy-to-hack, weeknight recipe.
Pasta night isn't a rarity at Bethenny Frankel's house. The Real Housewives of New York City alum whips up noodles on the regular, and has used her social-media feed to educate the public on proper pasta-sauce application. The Skinnygirl mogul is such a pro, she even has a hack for when you're craving pasta but trying to do that whole New-Year's-Resolution, new-me-fewer-carbs thing.
In a recent Instagram Story, Bethenny panned across a crisp salad and a pot of butternut squash noodles bubbling on her stove. "Healthy day! I guess it's a new year, different me," she said. And then, to honor fans' requests, she shared the exact recipe of what she was working on.
Explaining that she buys frozen butternut squash noodles to start, Bethenny continued, "I cover them in the beginning so they just get softer. Add marinara sauce, I add basil, oregano, garlic, salt, pepper, crushed red pepper that I mush in my hand first. And they taste better than zucchini noodles to me because zucchini noodles are like water. These are like — the sweetness of the butternut squash is good with the sauce."
And it looks rather cozy, too:
