Caroline Manzo Whipped up a Drool-Worthy Dinner with a Popular Carb Substitute from Trader Joe’s

The Real Housewives of New Jersey alum put a healthier spin on her pasta dish.

It looks like Christina El Moussa isn't the only one who digs Trader Joe's gnocchi. Caroline Manzo also proudly shared a photo of the grocery item, but The Real Housewives of New Jersey alum put a little spin on her pasta by choosing the cauliflower version. So if you're looking for low-carb dinner options — or just like looking at photos of cozy meals — do keep scrolling.

In the January 29 Instagram post, Caroline shared a snap of her kitchen creation. Plated in a black-and-white bowl, the dish contained Trader Joe's cauliflower gnocchi topped with a sauce containing spinach, tomato, and pancetta. "Also, topped it with white truffle parmigiana cheese," Caroline noted, adding a thumbs-up emoji.

Does this not look delicious? 

We took a peek at the nutritional info for the pasta sub, and found out that it has only 140 calories per cup. Not bad! Moreover, this type of "pasta" has 22 grams of carbs per serving, while the more traditional type has about 55 grams. But if you're not into cauliflower, remember that chick peas also make excellent "pasta!"
