As Emily Simpson continues to document her health journey, The Real Housewives of Orange County cast member is sharing the foods she always has at home.
"I don't count calories...that's too much work for me," she wrote in response to a follower who inquired about caloric deficit. "I just keep staples in my refrigerator at all times: ground turkey, spinach/lettuce, eggs, avocados, tomatoes, shredded carrots, black beans, corn tortillas, salsa [,] vegan cheese (I avoid dairy)...etc."
Explaining that she finds "find creative ways to mix these staples together for different meals," Emily went on to share one of her go-to recipes for turkey meatloaf. "I make it at least once a week," she wrote. "Sometimes twice a week, and I eat the leftovers for lunch the next day."
Last year, Emily gave BravoTV.com a tour of her refrigerator, noting in the video above that she likes "to keep a lot of fruits and vegetables," "yogurt," and sparkling water because, as she explained, "it kind of reminds me of champagne."
Amid what she previously described as a "very long journey to health," Emily recently opened up about her evolving relationship with food. "The biggest change I made was learning how to eat," she wrote on Instagram. "Yes ...at 43 years old I had to re-evaluate my relationship with food and realize that I was a serial grazer."
In June, Emily gave her Instagram followers more details of her eating habits, sharing that "Pretzels dipped in Nutella" is her "go-to guilty snack" and her go-to healthy breakfast is a smoothie made from blueberries, strawberries, banana, almond milk, ice, and chocolate protein powder. When it comes to her new alcoholic drink of choice, Emily has recently swapped swapped her former favorite, Champagne, for a "skinny spicy margarita."
