RHOC Mom Emily Simpson Confesses the “Random” Diet That Fuels Her Crazy Life With Kids

The Real Housewives of Orange County rookie is all of us.

There are leisurely mornings when we make frittatas using garden-fresh ingredients, and there are nights when we simmer our grass-fed meatballs in homemade sauce. (Thank you for the inspo, Danielle Staub!) And then, there are entire days where it feels like a miracle when we can even squeeze in time for a Pop-Tart. Emily Simpson, The Real Housewives of Orange County newcomer, can certainly relate to that.

When chatting with The Feast about her day-to-day eating routine, the Orange County mama shared an all-to-relatable regime. Here's how it breaks down, or — as Emily said: "This is how I eat. I call it grazing."

Emily's mornings typically kick off with a moment of caffeine-fueled Zen. Caffeine and calm may sound antithetical, but you'll get it if you have kids: "I need to have coffee first thing in the morning," she said. "I’ll even get up at 5 or 6 o’clock in the morning and go and get coffee before any of my kids wake up, and that’s like my thing. I sit there alone and I drink coffee." 

Though she doesn't usually eat breakfast, Emily does reach for a snack at work later in the day. "I usually just eat something random like a Pop-Tart out of the vending machine and like a Diet Coke," she shared. 

Then, dinnertime rolls around, and things aren't much less hectic. "I try to make dinner for kids but these two kids," she said. Some of you know all too well how that goes: "[One likes] macaroni and cheese but one doesn’t, she only likes pasta with butter. So then, you know, I end up eating the macaroni and cheese off of one kid’s plate and then the pasta off the other kid’s plate and then the broccoli that nobody wanted." Hey, at least she's getting in her greens! 

To sum it up? "That’s basically my eating schedule: random things that my kid did not want to eat," Emily said. Can she get an amen from the harried parents out there?
