This Is What a "Snow Day" Looks Like at Briana Culberson's Oklahoma House (PHOTO)

The Real Housewives of Orange County daughter shared a genius hack for feeding four kids on a busy winter day.

Briana Culberson is always ready to bring her followers some recipe inspiration. And on a recent busy snow day, she did just that. While her four kids were home from school due to inclement weather, Vicki Gunvalson’s daughter shared her genius hack for cooking up a big breakfast while caring for multiple kids.

Briana Culberson's pancake hack

In a January 16 Instagram post, Briana wrote: "Snow day off school = sheet pancakes in the oven!" The accompanying photos showed the sheet pancakes, which were topped with chocolate chips and banana slices. Briana also shared a peek at the ingredients she'd used to whip up the cozy meal. 

It appears that the dish was made from grain-free baking powder, protein powder, pancake and waffle mix, baking soda, vanilla, and maple syrup. 

Briana's caption shared more. "Last time I made pancakes I got the most hilarious messages. It’s really a pain in the rear to try to monitor pancake flipping with 4 kids running around, and most of the pancakes got neglected and ended up burnt," she wrote. "Thanks for all the suggestions for pancakes in the oven!"

Her post continued: "I made my pancake mixture like normal, spread out on parchment paper on a baking sheet, and baked at 350 for 20 mins. SO. MUCH. EASIER!" In the comments, she added with a laughing emoji: "I’ve wasted so many mornings burning pancakes."

Does Briana Culberson still follow the Keto Diet? 

While Briana spent years following the ketogenic diet, she and her family changed their eating habits in 2023. “We had to pivot from keto to a clean, whole foods diet to help one of our sons with some new medical shtuff,” the Oklahoma mom wrote in the caption of a January 11, 2023, Instagram post. “Our focus is on nutrient dense, clean food. Mostly animal based.”  

Briana went on to share that the family’s “meals nowadays” consist of primarily “meat (mainly grass fed/grass finished beef) eggs, fruit, raw dairy, organic rice, sourdough bread, [and] some vegetables."

She continued: “I’ve gotten some weird criticism about what we’re eating. It’s become so normalized to eat poorly. (I’m very guilty of that in the past — and was oddly enough insanely sick.) I’m the healthiest I’ve been since I was 16 years old. My child is healing. Someone may be criticizing my simple nutrient dense meal as ‘too boring’ or ‘repetitive’ while eating highly inflammatory seed oils, drive thru chicken sandwiches with over 30 ingredients, food dyes, high fructose corn syrup, processed sugars.”

Addig that “perfection is never the goal” and “impossible,” Briana noted, “being intentional with our food choices is most important.”

“We ordered pizza as a family last week and all snuggled on the couch and watched football. Then most of us had gut issues for days,” she confessed. “It’s ok, it’s a process and our focus is on our overall wellness. I will do ANYTHING for my children to have a better healthier life.”
