Bethenny's Red, White and Blue Olympic Menu
Eat like a winner.
Red, white, and chew. "The summer Olympics happen only every four years, and watching them can turn into an all day event, especially toward the finals. But sitting in front of the TV all day snacking isn't going to do you any favors," says Skinnygirl queen Bethenny Frankel on her site. "With that in mind, here's a light summer menu for your all-day Olympics viewing party."
Kick off your day like an Olympian with B's smoothie recipe. "Cheer on Team USA with red, white and blue fruit," she writes. "Blueberries, raspberries, strawberries, and banana slices make a beautiful and delicious breakfast or brunch treat."
Just add these ingredients to a blender and voila!
1 cup berries (such as raspberries, strawberries, or blueberries)
1/4 cup pomegranate juice
1/4cup water
1/2 banana
1 cup ice
Optional: A little bit of Stevia, maple syrup, or honey, if you want it sweeter
Now for lunch: "As afternoon rolls around, serve a bowl of my Cool Cucumber Salad along with your favorite chips and my Salsa Verde, and bring out the cocktail shaker!"
Bethenny's Cool Cucumber Salad Recipe
Ingredients:
1 medium cucumber
1/4 cup apple cider vinegar
1 tablespoon chopped fresh dill, plus sprigs for garnish (or your favorite herb)
1 teaspoon honey
1 teaspoon lemon juice
Salt and pepper to taste
Start by peeling and thinly slicing the cucumber, then set aside. "In a separate bowl, whisk together the vinegar, dill, honey, and lemon juice. Pour over the cucumbers and toss to coat. Season with a little salt and pepper," instructs Bethenny. Then, cover your salad with a lid or plastic wrap and place in the fridge for at least a half hour. "Enjoy the salad cold. Garnish with a few extra sprigs of fresh dill."
