Bethenny Turns Turkey Leftovers into Lunch

"I love leftovers; it is a great opportunity to make an entirely new and creative meal, and who doesn't have leftovers on the biggest meal of the year?" she blogs. "It's easy to portion up individual leftovers in freezable containers and freeze until you need a healthy meal quickly. You can also take the turkey meat, shred and add to quesadillas, soups, pasta dishes, etc. Extra sweet potatoes can be diced to use in a different dish or pureed for a soup for your kids."
That's right, bird can still be the word -- if you try her recipe and pack a lunch that will spice up your work day. Try the Bethenny Ever After showstopper's Turkey Hummus Sandwich. All you need is:
2 slices whole-wheat or whole grain bread
3 slices turkey
1/4 cup(s) of favorite hummus
1/4 cup(s) of fresh baby spinach
1 jarred roasted red pepper, sliced
Spread the hummus on both slices of bread, layer the other ingredients, and slice right down the middle. That's it! Want another tasty turkey transformation? Try her Avocado, Turkey, Bacon Sandwich. Scour your kitchen for:
2 tsp. of Dijon mustard
2 tsp. of light mayonnaise
4 slices wholegrain artisan bread

1/2 cup(s) of alfalfa spouts
"Spread mustard and mayo on both slices of bread," Mama Hoppy instructs. "Cook slices of turkey bacon in a nonstick skillet over medium heat until cooked to your preferred crispness. Remove bacon from skillet cut in half widthwise."
