Franklin Becker: All About His New Cookbook
'Good Fat Cooking' features tasty, healthful dishes that don't skimp on flavor.
Who says healthy food has to taste bland?
In his new cookbook, Good Fat Cooking: Recipes for a Flavor-Packed, Healthy Life, Top Chef Masters star Franklin Becker has cracked the code on how to create tasty, delicious food that won't bust your gut. And he's sharing the recipes with fans.
The book (available this week) features over 100 easy-to-prepare recipes that are based on "good" fats from nut oils, olive oil, fish, and avocados. Among the dishes: Acorn Soup with Pistachios, Black Bread and Apple; Olive Oil-Poached Cod with Roasted Tomatoes and Peppers; Charred Eggplant with Grilled Onions, Pickled Raisins, and Pine Nuts. There are also desserts such as Avocado Ice Cream with Lime and Coconut.
If anyone knows how to prepare mouth-watering healthful food, it's Franklin: he's been diagnosed as type 2 diabetic. And his book is the perfect guide for Americans who want to eat and live well.
"I wanted to provide my readers with an insight into how I look at food," Franklin tells the Dish. "Since being diagnosed with type two diabetes I have had to transform my cooking style and eating habits. This book concentrates on the importance of healthy fats in our diet. Healthy fats are necessary not only for diabetics but for everyone. They help our bodies function better and provide us with much needed strength for our mind and soul. Enjoy these recipes and have fun. My favorite recipe is the olive oil poached cod. But, in the end, it's all good!"
