Make Doma's Thai Style Salmon Carpaccio

Thai Style Salmon Carpaccio

Serves 4
Ingredients:
Carpaccio:
12oz Sashimi grade Salmon
1 Fresno chili (sliced)
½ shallot (sliced)
2 T toasted cashew
1t chili oil
Ginger lime dressing:
1T ginger fine chop
1 ½ T lime juice
1t fish sauce
2T white sugar
1t sesame oil
Pinch of sea salt
Garnish:
Cilantro Flowers or Cilantro Leafs
Coconut Air:
1cup coconut milk
1 ½ t sugar
½ t sea salt
Directions:
Carpaccio:
Combine all ingredients and set aside.
Dressing:
Mix all ingredients, set aside.
Coconut Air:
Combine all ingredients, whisk until sugar dissolves. You can add to a C02 charged whipped cream dispenser or simply use it as a sauce.
Assembly:
Slice the salmon very thin about a ¼ inch thick and fan it out on a chilled plate. Top with chili and shallot evenly spread atop the salmon. Now lightly dress with ginger lime dressing. Add small dollops of coconut air randomly on the fish. Finish with cilantro and a light drizzle of chili oil
