Al Roker Shared Exactly How He Makes His Favorite Keto Breakfast
The Today anchor has a delicious morning stand-by, and it's pretty easy to make.
Al Roker has his morning routine down — and it sure sounds delicious. The Today anchor, who's been following the ketogenic diet, starts his morning with a special egg muffin that sounds both decadent and easy to make. Naturally, we're taking notes.
Roker told Today about his early fuel, which he eats after a 4 a.m. workout at home. First, he beats six to eight eggs with a dollop of cream. Pouring the mixture into a muffin tin, he adds leftover veggies and crumbled bacon, and tops that with cheese. The muffins bake at 350 to 400 degrees for about 30 minutes.
Finally, Roker adds one more chunk of cheese to the muffins, puts them back into the oven to let the cheese melt, and voila! He's all ready to dine in a keto-friendly way.
Roker also has one coworker in particular who benefits from his morning kitchen routine. "Since Savannah [Guthrie's] the one who got me into keto, I usually bring her a muffin," Roker shared. Lucky lady!
